“It’s giving people an opportunity to reduce the arsenic burden of their rice,” says Dartmouth’s Margaret Karagas in a Nature story about a new study of a cooking method that flushes up to 57 percent of the arsenic out of rice.

Karagas is a professor of epidemiology and of community and family medicine at the Geisel School of Medicine. She is also the director of the Children’s Environmental Health and Disease Prevention Research Center and of the Center for Molecular Epidemiology.
